What to do with so many fresh-off-the-vine tomatoes?
Not that I’m complaining but why do they all have to be ready to harvest in the same two weeks? Wouldn’t it be better to spread out the bounty?
But that isn’t the way it works.
So I slice tomatoes, dice tomatoes, sauce tomatoes, and make up recipes with whatever is in the house.
Tonight it’s a “salad” of tomatoes, chickpeas, feta, kalamata olives, lemon, olive oil, fresh oregano, salt and pepper.
But first, I had a little fun with the tomatoes.
Nobody said I couldn’t play with my tomatoes first.
