Where Troubles Melt Like Lemon Drops (Day 48)

Conventional wisdom of the day: Eat the Rainbow.

Well you can drink it too.

Smoothie made from coconut milk, kale, carrots, banana, frozen cherries. Use amounts shown in picture above. Put in Vitamix and blend.

  1. My hubby is in a choir and they’re singing that song. OVER THE RAINBOW won an academy award for Best Song in 1940 – and as the story goes, they almost left it out of the production.

    I think the smoothie looks as good as the song!

    1. I sang that song to my kids to help them sleep, when they were still young enough to think that I could carry a tune. The smoothie was really tasty. I added a can of coconut milk to the veggies/fruit. Yum.

    1. funny you should ask that. I was about to respond to Suzanne’s comment that the smoothie tasted great but it was an unfortunate color: sort of a creamy brown. Better to put in something other than a glass glass so you don’t have to look at it as you drink.
